A small Alabama-based chain of restaurants serving more than a dozen varieties of chicken salad will open soon in Lexington.
According to a sign at Lexington Pavilion, a row of shops in front of the Target shopping center on Highway 378, Chicken Salad Chick will open in the former Judy's Cafe and Bakery.
The Chicken Salad Chick website says the concept has eight locations in Alabama, Georgia and Florida. But seven more locations, including one in Lexington and Greenville, are opening soon.
The restaurant serves a huge variety of chicken salad -- on sandwiches and on beds of lettuce -- with side dishes. There are also deli sandwiches and soups available.
