Lauren Kuperman's favorite recipe earned her a trip to the White House for a special dinner hosted by First Lady Michelle Obama.
Kuperman, a student a Pleasant Hill Middle School, attended the first-ever Kids' State Dinner. She was one of 54 kids whose recipes won "The Healthy Lunchtime Challenge" hosted by epicurious.com and the White House.
Kuperman's winning recipe was her mom's Vermicelli Chicken Salad, an Asian-style dish.
“My daughter Lauren loves Asian cuisine,” her mom, Faye, wrote on the Let's Move blog. “This can be challenging to pack for a lunch. I have come up with this satisfying ‘Asian-style’ lunch for her. I usually cook the noodles the night before. They are very easy to cook: It only takes 2 minutes in boiling water.”
Epicurious received more than 1,200 recipes in the contest. The dinner at the White House featured meals made using some of the winning recipes.
President Barack Obama also made a surprise appearance at the dinner and said he was proud of the kids for promoting healthy eating.
